A beautiful ballet slipper pink, with a delicate sparkle a beautiful signature of Rosé wines from the South of France. La Folie is the perfect aperitif, as well as a delightful accompaniment to many desserts and a brilliant wine for all happy occasions.
Tasting Notes
Light and bright pink colour, violet reflexes with a fine stream of elegant bubbles. A lovely balance of rich and fresh aromas on the nose with apricot, yellow peach, melon, passion fruit, all tied up by a subtle lavender honey note. Tense yet ample, with a refreshing acidity that gives depth to a creamy and white fruit flavoured profile. Perfect for an indulgent brunch and all festive occasions.
Cocktail
La Folie, Apricot and Lavender cocktail
Ingredients (about 8 glasses)
For the cocktail
- 1 bottle of La Folie sparkling rosé
- 250 ml fresh apricot juice
- 200 ml lavender syrup
- 8 fresh lavender sprigs
For the lavender syrup
- 6 buds of fresh lavender
- 1/2 cup caster sugar
- 1 cup water
Method:
- For the syrup, put the sugar and water in a saucepan
- Rip the flowers off the bud and add them to the saucepan
- Cook the mixture until the texture thickens a bit and then sieve it into a glass jug and set aside to cool
- Place one lavender bud into each glass, with 3 tablespoons of apricot juice and 2 tablespoons of the lavender syrup
- Top up the glass up with chilled La Folie and stir very gently
- Enjoy the taste of summer in Provence!

In the winter months Rosemary & Garlic Baked Camembert, or summertime Delicately sparkling La Folie will pair well with fresh fruit salad, cherry panacotta or smoked salmon on cucumber canapés.
